Flavor & Texture

Florida spiny lobster runs firmer and sweeter than cold-water lobster, with a clean finish and none of the soft, waterlogged texture that comes from a long supply chain. Split and broiled, grilled over coals, or poached in butter. The meat holds its shape.

How It's Packed

Freezer paper first, then vacuum sealed. The paper takes the sharp edges of the shell off the bag so the seal never gets punctured in the freezer, and it blocks the light and air that cause freezer burn. The band is the weight of each tail. A 4–5 oz pack is two tails at 4–5 oz apiece, not 4–5 oz total.

Are there bones in lobster tails?

None. Lobster has no bones. The tails come in the shell, which protects the meat in the freezer and holds it together while it cooks — the meat lifts out clean once the shell is split.
