Grouper tacos. The same wild caught Gulf grouper we cut for our fillet portions — packed for taco night. During processing, not every fillet finishes at a full 6 oz portion. The off-cuts and trimmings are clean, premium grouper meat, so we set them aside and pack them here instead of letting them go to waste. Caught hook and line on natural bottom structure in federally managed Gulf waters, processed within days of landing, and frozen at -5°F through our engineered cold chain.

Flavor & Texture

Mild, slightly sweet, firm white flesh that holds together in the pan and on the griddle. The cuts cook fast and take seasoning without a fight — grouper is one of the best fish there is for a taco. Char them up, add slaw and lime, done.

Grouper is a lean, low-calorie protein source — approximately 20g protein per 3 oz serving. Rich in omega-3 fatty acids, phosphorus, potassium, and B vitamins. Naturally low in sodium and saturated fat.

What You Receive

An 8 oz pack of wild caught grouper cuts, vacuum sealed and ready for the pan. Because our taco packs come from the trim across a full production run, a single pack often combines two or three grouper species — gag, red, scamp, snowy, yellowedge, and Kitty Mitchell — every one the same fish we source for our fillet portions.

How big are the portions?

Portions average between 5 and 7 oz. We aim for 6 oz every time, but because we hand-cut and portion every fish, hitting it exactly isn't always possible — and we never go below 5 oz.

The FDA's recommended serving size for fish is 4 oz. We felt that was a little small for a full meal, so we sized ours up by 50%. The result is a balanced, individually portioned meal.

How long can I keep it in my freezer?

For the best quality, we suggest eating within 6 months of purchase. That said, our fish holds excellent quality out to 12 months.

After 12 months it's still safe to eat, but the quality starts to degrade.

Are there bones in my fillet?

Every fish is hand-cut and portioned, and we remove the bones — pin bones included — as we go. Each fillet is inspected twice before it's packed.

Even so, a small bone slips through now and then. It happens with hand-cut wild fish, so give each fillet a quick check before cooking.

Frozen Within 2–3 Days

Most grocery store fish is 7–10 days old before it hits the counter. Ours is processed and frozen within 2–3 days of landing.

Flash freezing preserves the omega-3s, protein, and flavor that degrade in fresh fish over time.

Better Than “Fresh”

In seafood, “fresh” often means never frozen but days old. Frozen right means genuinely fresh.
