Kitty Mitchell grouper. What our captains call speckled hind — a deep-water reef species caught on hard bottom and rocky ledge structure in federally managed Gulf waters. Strict bag limits keep it rare enough that most markets never see it; our captains only bring it in when it turns up on the line. Processed and vacuum sealed within days of landing. Frozen at -5°F. Flavor & Texture

Firm, dense white flesh with a mild, sweet flavor — close in character to red grouper but with the cleaner edge deep-water fish tend to have. Holds up well across preparations, outstanding kept simple.
