Mahi-mahi tacos. The same wild caught Gulf mahi we cut for our fillet portions — packed for taco night. During processing, not every fillet finishes at a full 6 oz portion. The off-cuts and
trimmings are clean, premium mahi meat, so we set them aside and pack them here instead of letting them go to waste. Taken hook and line on the troll, offshore in open Gulf water. Processed, vacuum sealed, and frozen to -5°F — all within 48 hours of the fish hitting the dock, through our engineered cold chain.
Flavor & Texture
Mild, slightly sweet white flesh, lean and firm. Mahi takes a marinade fast and holds up to high heat — the cuts hit the grill or the griddle and come off in minutes with a clean char. Tortilla, slaw, lime. Mahi is the fish most people picture when they picture a fish taco.
Health Benefits
Mahi-mahi is one of the leanest, highest-protein fish available — approximately 23g protein per 3 oz serving with very low fat content. Rich in B vitamins (B12, niacin), selenium, and potassium. Excellent for high-protein, low-fat dietary goals.

How big are the portions?
Taco packs are 8 oz — 2 oz more fish than our standard 6 oz fillet portion. The cuts are bite-sized and vacuum sealed, ready for a hot pan, the grill, or the griddle.
One pack feeds two people a taco dinner, depending on how you load the tortillas.
What goes into a taco pack?
The trim. During processing, not every fillet finishes at a full 6 oz portion — and those off-cuts are the same wild caught Gulf fish we sell as fillet portions. Rather than let clean, premium meat go to waste, we set it aside and pack it here.
Because the trim comes from a full production run, a snapper or grouper pack often combines two or three species from that group. Every one is fish we source for our fillet portions.
How long can I keep it in my freezer?
For the best quality, we suggest eating within 6 months of purchase. That said, our fish holds excellent quality out to 12 months.
After 12 months it's still safe to eat, but the quality starts to degrade.

Are there bones?
Every fish is hand-cut and we take the bones out — pin bones included — as we go. The taco cuts get the same two inspections our fillet portions do before they're packed.
Even so, a small bone slips through now and then. It happens with hand-cut wild fish, so give the cuts a quick check before cooking.

Most grocery store fish is 7–10 days old before it hits the counter. Ours is processed and frozen within 48 hours of the fish hitting the dock.

Flash freezing preserves the omega-3s, protein, and flavor that degrade in fresh fish over time.
Better Than “Fresh”
In seafood, “fresh” often means never frozen but days old. Frozen right means genuinely fresh.
