Queen snapper. Deep water from start to finish — queen snapper lives at 200 to 800 feet, well beyond the reach of recreational fishing. It comes to market almost exclusively through commercial captains fishing federally managed Gulf waters on hook and line. Rarely seen in stores. When we have it, it moves fast. Processed and vacuum sealed within days of landing. Frozen at -5°F. Frozen Fresh.

Flavor & Texture

Mild, delicate, sweet white flesh — lighter in character than red snapper, with a finer texture. Often described as more refined. Takes heat beautifully, pairs with citrus and light butter sauces. One of those fish that rewards restraint in the kitchen.
