Scamp grouper. Ask any Gulf captain which grouper they'd take home and the answer is usually scamp. Federally managed, caught hook and line on natural bottom structure. Scamp doesn't come easy — it fishes deep, holds structure, and comes to the boat clean. Processed and vacuum sealed within days of landing. Frozen at -5°F. Frozen Fresh.

Flavor & Texture

Dense, sweet white flesh with a tighter grain than red grouper. Clean, refined flavor — often described as the finest eating of any Gulf grouper. Holds beautifully on the grill, pairs well with simple butter preparations, and doesn't need much help.

Scamp is a lean, high-protein fish — approximately 21g protein per 3 oz serving. Good source of omega-3 fatty acids, selenium, phosphorus, and vitamin B12. Low in fat and calories.
