Snowy grouper. True deep-water — pulled from 200 to 1,000 feet of Gulf water on hard bottom and rocky structure. Federally managed under IFQ quota. Most people have never seen one in a store. Our captains fish it because it's one of the cleanest, densest grouper in the Gulf, and it processes beautifully. Vacuum sealed within days of landing. Frozen at -5°F. Frozen Fresh.

Flavor & Texture

Dense, firm white flesh with a clean, rich flavor. More body than red grouper, less pungent than some deep-water species. Holds together under high heat. Excellent in a ceviche, equally good in a cast iron.
