Flavor & Texture

Mild, slightly sweet white flesh with a fine, delicate flake. Lighter in character than red snapper but with a clean, distinct flavor that rewards simple preparation. Pan-seared, roasted, or over an open flame — it handles heat well and doesn't need much help.
