Wahoo. Known as Ono in Hawaii — one of the fastest fish in the Gulf and one of the finest on the plate. A pelagic predator caught offshore on the troll. Wahoo doesn't come in every trip, which is part of why it's worth having when it does. Processed and vacuum sealed within days of landing. Frozen at -5°F. Frozen Fresh.

Flavor & Texture

Firm, mild white flesh — some of the cleanest flavor of any Gulf fish. Low oil content gives it a lean, almost neutral base that lets preparation do the work. Outstanding seared, excellent raw for poke or crudo. The fish that gets ordered again immediately after the first bite.
