Whole jolthead porgy. Named for the way it feeds — hammering shellfish off reef structure. Caught hook and line in Gulf waters, a reef species rarely seen commercially outside the Gulf. Gutted and scaled at the fish house, vacuum sealed within days of landing. Frozen at -5°F. Frozen Fresh.
